actually, when I respond to that individual, I always look for stuff not of a poli nature because I agree with you, whats the sense to respond when you know going in hes gonna ignore facts that disagree with his worldview.

As far as ciders , we have a hug market in the fall for sweet(Unfermented cider) We use thes for summer drink, as mixers, and in cooking saucs. our Saur Krauts are sweetened with a Rambo or Stayman sweet cier.
Along the back roads, many AMish stores will have a cider barrel ,in a chiller and they sell 16 oz glasses of somw of the most refreshing sweet ciders .(Theyll add frsh lemon if we need more tang.
HARD Cider (as to distinguish it from th above) varis in aV from 2.5 to 20% alcohol .Anything above 7%, is, to me, a wine tasting thing with fizz. Its almost like Brut Freixenet (Spanish Champignoise stuff)
Ill drink a hard cider with a dish of ic cream or salty fish with crackwrs an onion.
Seet Cider has a fridge life of about a week and thei=n it turns vingary not cidery. All the yeasts that live wild impart weird flvors tht cn make a sweet cider taste like a gym locker.

Something like WOODCHUCK or even REDDs are dome in a yest free industrial space so the ciders are clean tasting and clear as amber water.

The American revolution was pretty much lubricated on cider . not beer, so we probably used your recipes for a hundred years or more (until the joys of sweet cider allowed the fairer sex to enjoy these libations)
There was a cider drink that was a mixof Rambo/Cortland sweet cider mixed with a about 25% hard cier (just for the ladied)
But I gotta say, Duroc Hog Pork chops , thick cut and served up with a sweet cider , onion, tarragon Gravy is a joy for a summer supper out doors.
Course , for that dinner we drink southern style sweet lemonade ice tea .
