For scholarship, I'd go with "studium" which has its root in zeal or
eagerness. It is used to mean an application to learning. That, I think,
is close to what we mean when we say "scholarship" in this context.
As for "honor", if you were being strictly classical, "virtus." But the Latin
used in mottos often uses "honor" itself. And it is clearer to the modern reader.
I'd suggest "ministerium" for "service".
