For a start what you said was not a joke, at best it was a wisecrack, but it wasn't a very good wisecrack.  You need something that can be expressed in a single word.  As in 
You wouldn't know style if it bit you on the arse, or 
comedy/intelligence/literature, basically anything as long as it's one, (or possibly two,) word(s.)  The phrase 
You wouldn't know the proof that I am right if it bit you on the arse, is too clumsy and doesn't work as a metaphor even when you substitute a pronoun.
