Those "Zünfte"/"Gilden" (guilds), I referred to are just the opposite to trade unions (we have them, too, btw).
The (modern) equivalent are employer's organisations. (And today's guilds act as those here.)

As Walter pointed out, guilds are employers' organizations. They operate along the lines of cartels.
