The gospels were written by eyewitnesses, not "several hundred years later".-
Matthew was a disciple, Mark was was a friend of Jesus's right-hand man Peter, Luke was a friend of Paul who spoke with the risen Jesus, and John was a disciple.
It's only natural that the fascinated public asked them to write about Jesus, and the bible went on to become the world's best-seller.
Just like nowadays people buy books about Elvis written by people who knew him like musicians, friends, his wife, disc jockeys and so on..
