I've never seen 00 flour in the stores I frequent - but I often mix flours for different breads; have gotten into whole grains lately more than I have in the past, but still like unbleached white, or a good bread flour, or semolina. I've one recipe that's all semolina. I used to be able to buy italian durum semolina in 5 lb bags, but not here in hot sandville... so there's something I miss.
