Hello, Eva's Wine Cellar......Caveat Personnel? I don't think I've ever heard of your company......Yes, you heard right, we're interviewing chefs......That's right, we need someone right away.......You're sending over a few prospects?......Sure, I guess it couldn't hurt to talk to them. I haven't heard back from Jacques yet.

<cleaning crew supervisor sticks nose into kitchen> "Hey lady, there's a bunch of guys out front to see you."

Hello, c.i.! So glad you're back in town in time for our reopening!

$100 Shiraz? I sure hope it was good!

'Scuse me a minute. I have to see some people who are here to interview for our chef position.... On second thought, why don't you come with me? I trust your judgment.

We'll work on that for your next hiring spree. That's only if I can remember what I taught. I remember it was about asking the right questions, and listening to the answers given by the applicant - and their body language. LOL

As you can see, I am only a Cook, nearly married to a Chef, but I come with 17 years hospitality experience, before I became a Real Estate Agent, and I CAN SO present food, as well as ensuring the cat is OFF THE TABLE.. Wanna hire me?

Your pictures reminded me of my trip to the Amazon in Peru where a host family fed us from banana leaf as our dish and table. We ate with our fingers, and they also served grilled grub.

Beautiful! Makes me want to make it again myself. I generally forget about it since it involves going to a special butcher shop.

There's something special I think about presentation and "different" Smile We go to an Asian shop to get those, usually use them when we have dinner parties of that kind of food...

Osso make it, it's one of my favourite meals no matter which way you cook it...I love black olives in mine.

Oops, not hired yet... Better not get carried away Smile

Well, hey, I have put swiss chard (silverbeet) in my gremolata...
a friend made it with lamb shanks, delicious too.

Speaking of wine, he and his wife are wine mavens of a high order. Too high, he likes to read the wine book out loud and declaim about various choices..
But once I visited them in Napa - they picked me up in Sacramento, we got to their house late in the evening - and they gave me a glass of one of the best wines I've ever tasted before I trundled off to the feather bed in the edwardian whadyacallit room, kind of a hexagonal outcropping from the rest of the house.

I just looked it up again too and see that mint is often added. I just happen to have a pot of mint growing by my front door.

It looks like we've found our kitchen staff! FS, would you and David please stay and help us? It would be so nice to have two of you, and we could certainly use your skill set. I never know when we'll have a big crowd, so I hope you're flexible.

Let's see...the wine racks have been cleaned, and the kitchen is back in order. As soon as Jacques gets here, he'll put the back bar in order. The cleaning crew has done a stellar job. FS, would you mind whipping up something for them before they go? It's really the least we can do. I'll go set the tables and light the candles...We're almost ready...........

Osso...would you mind helping FS put away the provisions that just arrived? You can show her where the pantries are.

Jacques, eh? Looks like a professional model. They all seem to shave with the Classic Yassir Arafat razor. You know, the one that leaves the stylish one day stubble.
