La Quercia

Nitrate-free Tamworth bacon is meant to be eaten uncooked.
Frying your bacon is so passé. La Quercia caused quite the stir at this year’s Fancy Food Show in Washington, D.C., when it premiered its new Tamworth bacon. What was the big deal? Make that a raw deal – this bacon is meant to be eaten uncooked.

The company uses pasture-raised, antibiotic-free Tamworth hogs (an English breed known as the “bacon pig”), grown especially for La Quercia over the last four years by a farm in Osage County, Missouri. The pork is cold-smoked using applewood and rubbed with sea salt and spices, with none of the nitrates you usually find in bacon.

“To me, there are two things that really distinguish the Tamworth from other types of bacon,” said Herb Eckhouse, who owns La Quercia (Italian for “the oak”) with his wife Kathy. “One thing is that it cures up really sweet. That means it has a nice, natural sweetness to it without having to add any sugar. The other thing that distinguishes it is the fat. The fat isn’t rich and creamy like you’d get with a Berkshire pig. It’s very soft, making it a nice complement to the meat instead of overwhelming it.”

So, how does he eat it?

“I like to eat it raw or just very lightly cooked,” he said. “You don’t want to crisp it or you’ll lose the fat. You want the fat to just melt in your mouth.”

"I don't intend to cause them any pain," said Johnson. "Somehow they don't sting me because of that."

Rooftop recon showed a honey factory of epic proportions. Inside, wranglers uncovered a hive housing nearly a quarter million honey bees. Several combs dripping with honey grew nearly eight feet tall and a yard across.

Schumacher gently removed the bee's home. With hives stored, wranglers vacuum the bees and take them to an apiary, or bee farm, in Hays County.

A massive crab with a 60-centimetre claw span has been accidentally caught by lobster fishermen in Cornwall.

The colossal crustacean - one of the biggest crabs ever caught off Britain - was picked up in a lobster pot five miles south east of Falmouth.

Skipper Ned Bailey says he could not believe his eyes when he first saw the giant crab. But rather than tucking into the edible crab he contacted the local Blue Reef aquarium.

Once there, the crab, nicknamed Titan, was weighted at 3.5 kgs (8 lbs) and inspected by experts who marvelled has his fist-sized claws. And when we say 'marvelled' we obviously don't mean 'started mentally calculating how many people Titan could feed'.

Blue Reef curator, Matt Slater, said "Ned called us as he knew Titan was a magnificent specimen.

"You often hear reports of giant crabs and take them with a pinch of sale. However Titan really is a bit of a monster.

"He’s twice as big as any other edible crab we have ever had at the aquarium. His claws alone are absolutely massive!

"Titan’s in fantastic condition and is quite feisty so you do have to take care when handling him. There’s no accurate way of working out how old he actually is – but judging on his size alone he must be close to a decade old, if not even older."
