White Lightning is moonshine. Moonshine is illegally produced hard alcohol, still happening in parts of the South. I am surprised, Spendius, that you didn't know that. It shows up in one of the finest American cultural exports ever, the tv show "The Dukes of Hazard."
"Pitchin' woo" is a bit tougher. The songwriter needed 3 syllables that would set up the rhyme a couple of lines later. I think it is meant to invoke an image of a couple of teens sitting on the front porch of the girl's house in the evening. The lad is trying his best to woo the lass, but both of them realize her mom, dad and grandma are not too discreetly peeking through the blinds.

And I thought us Brits were the only class conscious ones.
