In the interests of cross-cultural awareness - what would you call 'meat cookies'?

In Australia we'd probably call these little rissoles.

Hmmm.

I guess to identify the general shape and concept, a patty of some sort.

Like a hamburger would be a ground beef patty.
We have a thing called a patty melt that instead of on a bun, it's served on buttered grilled bread.

Those sausage meat cookies I pictured would be called breakfast sausage patties, as oppposed to breakfast sausage links.
So funny, they are the same thing in a different shape, but most everyone has a preference for one or the other.
Well, except for wives who do the grocery shopping. They just buy whatever their husbands prefer.

We use the term patties too - like hamburger patties - but once they get to a certain thickness, say over an inch, they turn into rissoles

Looks like "meatloaf." Except meatloaf doesn't have a pastry cover.

Used to have runzas when I lived in Nebraska (German influence).

ANZ rissoles don't have pastry covers - neither did the meat cookies. But the Runza entry on wikipedia was interesting - they're basically a take on pierogis. The Oz equivalent would be a sausage roll (not a chiko roll - which is something else entirely https://en.wikipedia.org/wiki/Chiko_Roll).
