I don't contribute (much) to this thread.

But I am a prodigious trencherman

And I just wondered.....we get a particularly delicious type of mango here about now in the season (had one this morning, I bought a box of them last week) which is yellow in colour and is imported from Pakistan.
Can you get those where you are? They are beyond compare.

No idea. Our mangoes are generally green and red, a little yellow but mostly Xmas colors. Hmm.

Thai Spring Roll, 1 serving

Snack: Fruit Salad, 1.25 cup
Yogurt, Stonyfield Farm fat free plain (6 oz)
1 pear, medium

CALORIES 1381 CARBS 178 g FAT 29 g PROTEIN 43 g Sodium 2145

Another very low cal day, also low carb. Just didn't feel like eating a lot.

We get those too here of course, but for a short season, the Pakistani mangoes arrive.
They are so unlike ordinary mangoes, and better in every way.

A few chips,

some delicious blueberry sangria

some boiled shrimp, (maybe a few more than some)
some eggplant dip (mm mm)(Barefoot Contessa!)
Some popcorn.
Didn't seem like at lot, but given that I don't eat a lot ....

I've only ever seen yellow mangos. never heard of red/green ones.

I had never seen the yellow ones until about two years ago. (my Damascene conversion)

I think probably that the green/red ones are easier to transport to our northern isles. Firmer and chewier, ripen on the journey maybe.

The yellow ones (softer, fragrant and much sweeter) are not handled in bulk but are transported here five to a box. Cardboard boxes.

Okay, is that enough about mangoes now? We had another two this evening btw.

Have you ever frozen a mango? I have, but I haven't tried eating it yet. I'm learning about frozen fruit fairly late in life - Dys and Diane had grapes in their freezer, primarily for Fred the Bitd, when I was housesitting there a few years ago. The grapes were a revelation... delicious.

Yesterday

another big bowl of curry soup, this time after adding to the chicken, potatoes, carrots, peas and curry "discs" and water - a can of good canned tomatoes (as opposed to horrible canned tomatoes), more frozen peas, some chicken broth, and a bunch of chopped up thin spaghetti. Which leaves me with enough soup for an army, but tastes delicious. I might not throw out the rest of that Japanese House Red Curry package after all.

But... I'm still trying to replicate a yellow thai curry I used to die for at East Wind Cafe in Venice. It was a lunch special, the chicken curry, bowl of rice, a green salad, and perfect thai iced tea for little money. (There is much mediocre thai ice tea abroad in the world, I've discovered since then.) On yellow curry, I've been saving all sorts of recipes.

Then I need to get into indian curries, which I used to love but haven't eaten in a long time, and have never cooked myself.

I've been making mango salsa for the past few weeks. It's fabulous on fish. I guess salsa is not quite the right word for it; it's more like a mango refrigerator salad.

It's 2 mangoes, diced small, a green pepper, diced small, four or so plum tomatoes, their insides raw and scooped out and added, and their exteriors put under the broiler for about 5 minutes, then diced. Plus thinly sliced celery and vidalia onion, chopped or torn cilantro, all tossed with chipotle and cayenne pepper powders. Serve cold; it's also kinda nice over plain yogurt.

It's better the second day.

Tofu, extra firm, 0.2 block

Dinner: 14 oz mixed greens salad
Skim Milk, 1 cup
Fruit Salad, 0.5 cup
Artichoke and veg pizza (1/4 pie)

Snack: Fruit Salad, 0.25 cup
Yogurt, Stonyfield Farm fat free plain (6 oz)

CALORIES 1673 CARBS 268 g FAT 41 g PROTEIN 116 g Sodium 2486

Sodium was a bit high.

I stayed the same this week. This coming weekend, 5K #2! Smile
