burger with baby corn, sliced tomatoes, cheese curds and hash browns on the side


way too full

would have been a good meal on a normal day. not enough exercise to accommodate all that today

it was tasty, but wrong

Tonight we had a quickie meal I dreamed up many years ago. I got home late from work but everybody was hungry. I sliced a large onion in a little olive oil, then brown about a pound of ground beef, toss in about 8 ounces of sliced mushrooms, season with as much chili powder and cumin as you like (I have a heavy hand) as much garlic powder as you like (or tolerate) and before the onions get too soft stir in a can of a condensed tomato soup right in the pan and stir until it's all incorporated. Taste to see if it needs salt, salt will brighten it up if it seems flat....up to you.....

I was an "Oh my God what am I going to make for dinner" deep dive that everyone seemed to like. I know using canned anything is not fine dining
but it really turned out great. And I was desperate.

Just a bagged salad kit. Think it was called Sunflower Crunch.
greens, kale, bacon bits, sunflower seeds with citrus onion dressing. I cut up a Campari tomato and some red bell pepper into it. Then I tossed in some hemp hearts and added some plain goat yogurt.

Pretty good.

INGREDIENTS


(hardshell hoagie roll )

hot italian sausaage grillers 1 per person

huuge onion sliced into rings


RECIPE

SLOOOWLY fry the onions, as they are just beginning to brown, toss in about 3T of Worcestershire sauce and 4T of ketchup. (keep frying slowly and stir in the two condiments)

Fry the grillers quickly. Puncture as they brown

Place a griller on a roll and covr with the fried onion mix.Add jalopeno chop if desired (I like a half tsp on my sammich)

We love em once a month . Tonite was the night

The Rican is working late so I’ll be making his pork Chili Verdi with beans and Spanish rice for din din tonight.

Whenever I think of paella, I get a mental picture of a bunch of pretentious white people, with maybe 1 token Other standing around in white linen caftans around the hosts restaurant grade kitchen island. They're all sipping and discussing the merits of the amusing tempranillo that Hunter and Sloane brought.

Everyone is doing a vitally important task. Margaux is excitedly pitting the olives for tapenade, and Quinn is well on his way to being quiched and rogered.

Yeah, that used to be my version beans and rice, refried pinto beans and Mexican rice before I became pre-frigging-diabetic and went with a ketogenic diet. I now avoid carbs as much as possible and have dropped to normal blood glucose levels.

Since I was dining solo last night I decided to butter fry up a mess of mushrooms. We'd taken a long drive to a country butcher/market the day before and I bought some of them there on a whim. I'm the only one who likes them here.

Not having had the foresight to take something else out for myself, I had to poke around for something to go with them. Ended up frying four thick sliced double smoked bacon slices, and tossed in a handful of walnuts with the mushroom fry.

It was fabulous!

I love fresh mushrooms sauteed with caramalized onions until a sauce is renered and to which ill add a T of worcestershire.
I like the walnut idea.

It was great.

I like fried onions and it would have tasted good if I'd added them, but (!) I don't have mushrooms frequently, and didn't want to overpower them. I can have delicious onions any time.

Tonight we’re going to put some steaks on the grill and have baked potatoes with a side of green beans.

Last night I made scallops over risotto and a side of asparagus! It was delicious.

Sounds terrific......I'd have to use pecans because walnuts irritate my mouth
