patted a porkloin down with 1/maple bbq sauce 2/white truffle vinegar (a bit of the good stinky version) 3/ginger garlic honey bbq sauce from the Redhead Pantry

it's marinating

trying to decide if noodles or rice will accompany the pork after it's been grilled

Lining up with an inch overlap three flour tortillas.

The largest burrito supremo grandioso I ever made.
Four hand roll.
Meat/check, refried bean/check, home made salsa/check, guacamole/check, sour cream/check, lettuce, tomato, onion/check, check, check, hollowchinos/check muenster cheese/check.

Pondered crushing up tortilla chips and sprinkling before fold for texture.

@alex240101,
good choice

( I wondered about your sanity if there was a 'real' European Muenster in there - your neighbours would have been calling in the Hazmat crew)

Fman - lemon AND balsamic?

I'm on the cape with my family. We have two kids who eat little, one adult on a cardio-healthy diet, three adults who like to eat somewhat richer foods, one adult who eats a low-fat diet - and there are two of us who are (mostly) vegetarian. We are still managing to eat yummy meals. We've made a pan-asian meal (korean-japanese-thai), stuffed turkey breast with apple and cranberry stuffing), various pizzas, moroccan fish..... But, my favorite is the chickpea (garbanzo) patty sammies we had for lunch today. MMmmm-mmmm!

@littlek,
I wanna hear more, when and if you have time, K.

Me, I'm making today's version of spaghetti all'amatriciana crossed with spaghetti all'arrabiata plus this and that.

Spaghetti al Osso Forgetto:

So, 1 tbs of butter and splash of olive oil, to sizzle two cloves' worth of minced garlic, can of petite diced tomatoes with basil and garlic, something like 1/4 c of oldish red wine, a few cans of water, cut up thawed previously cooked bacon strips, 3 relatively red dried chiles including the seeds, some frozen french cut green beans. I'm waiting for the pasta to cook (ordinary, daVinci).
Have on hand some parsley to add at last minute. I've some parmesan too, not the best stuff. Probably won't add the parm.

I probably most want to hear about the chickpea thing.. but the whole array sounds good, even if I didn't red-up the turkey thing, or pizzas.

@ossobuco,
Pan-Asian isn't worth typing up. We used a discounted cook book and the results weren't wonderful (but it was pretty good). We tried pad Thai which was just blah and the Korean-Japanese dish was compiled by my b-in-law. That was doctored, so I couldn't just copy down the recipe.

I'll try to remember to type up the Moroccan fish dish before I leave the cape.

The recipe for the chickpea sandwiches can be found at the link below. We added double the garlic and extra cayenne to the aioli. Don't skimp on the salt on the patties....

@littlek,
Well, this brings up chickpea flour. I've kept my eye out for it for at least two years..

But, thanks for the recipe, sounds great.

Went to a Thai restaurant in Brooklyn today.

Starting off with a Thai ice tea. What a beautifully array of brilliant oranges and delicious to boot. Had dumplings (chicken I believe) with a peanut sauce for the appetizer. Then had crispy duck fried rice for my entree.

Good food and reasonable prices.

@ossobuco,
Osso, try health food stores or Indian food stores. Remember it has several names....

Quote:
chickpea flour = besan (flour) = gram flour = cici flour = chana flour = garbanzo bean flour Shopping hints: Look for this in Indian markets or health food stores. To make your own: Lightly roast dried garbanzo beans, then grind them in a blender until mixture has the consistency of flour.

@littlek,
Well, they are on the other side of town.. but I just remembered that Whole Foods took over from Wild Oats, a little closer to us. I'll have to see if they carry it. I've had my eye out for it since I saw a Mark Bittman recipe that called for it..
