Tonight: Corned beef with mustard sauce.

I'm pleased to report that it actually worked out very nicely! (Never cooked corned beef before.) Very pleased with the results. However, I may not cook it again in the too near future, having had 2nds last night, & possibly 3rds tonight! I think I'll stick to recipes for one for a bit! Laughing Wink

@msolga,
it was another mushroom day for me yesterday

mushrooms on toast for breakfast

mushrooms and onions for most of my late afternoon/evening meal
I had a grilled burger with more mushrooms for dinner

tonight? not sure yet. I'll be hungry after dance class, but I don't like anything heavy that late in the evening.

@msolga,
but I'm not in the US!

we get most of our mushrooms from local hydroponic gardens - they're available year-round. It's quite wonderful. Most of them come from the area near djjd. As I recall, he manages a large hydroponic veggie establishment. It's good business here.

Yes, we get them all year around, too, ehBeth. Grown in "mushroom factories".
Though ours don't sound nearly as tasty as djjd's.
I really love real field mushrooms, though sadly they're almost impossible to buy in the shops. Even in mushroom season.

Last night we had some ham leftover from probably easter, reheated, and some cheesy potatoes and broccoli. It was quite good.

Tonight we are going out for barbecue! Oink!

@cjhsa,
Hello cjhsa. May I ask where you folks go for barbecue?

Cedar planked white fish, cheese and chive, extra whipped mashed potatos, grilled asparagas.

@alex240101,
Yum Alex - as usual - sounds amazing.

I had my chicken and carmelized onions on whole wheat tortillas with onion and garlic sour cream and a little mont jack - you can't really mess that up. Romaine with mandarin oranges, almonds, thin sliced red onions and a lite balsalmic vinagrette. Can't mess that up either. The only thing I could taste was the onions though...so maybe I am not a good judge...stupid cold.
