I had a super duper great lunch, which I might even do a thread about I was so pleased. So, dinner is thawing, a baked chicken breast with tikka "rub". Probably have a glass of pinot noir with that. Will get my veggies tomorrow.
I found the easiest of easy recipes online the other day & (rather sceptically) thought I'd give it a try last night.: Ingredients included a free range chicken, chopped into 8 pieces (which the butcher chopped up for me, to make it even easier), some chopped onion, one red & one yellow chopped capsicum, some fresh bay leaves & a tin of Italian tomatoes, chopped. Threw the whole lot into a big baking dish & mixed everything around a bit. Added one Chirozo sausage (thinly sliced) on top. And some extra virgin olive oil sprinkled over. Plonked the dish into a pre-heated oven & cooked for 1 1/2 hours. How easy was that? And guess what? It was terrific!

I went to a Korean resto with some old pals last night. Had a big bowl of soup that had rice noodle discs and meat-filled dumplings and tons o' veggies. I can never finish those giant soup bowls. The seaweed side was excellent as well, as was the veggie tempura starter we had.

Snack day.
Made chili yesterday.
Wrapped some sausages with croissant dough. That was lunch.
Dinner: Hummus, tabouli, liver sausage sandwiches.
Made some stuff ahead yesterday -- a big tub of cole slaw (mother-in-law's recipe with sugar cut by HALF), lazy cook's cabbage rolls, walnut cranberry muffins (tweaked grandma's bran muffin recipe) and carrot ginger soup.
Like you, msolga, I found the recipe for the soup in a magazine, but I was pleased with the results, too. The secret was the curry powder. Very warming.

No, I didn't serve it with rice, ehBeth, but I guess I easily could have (I eat lots of rice. Love it.) ... I steamed a new variety of potatoes (I'd not tried before) as well as some steamed French beans (an Olga addiction!) & mopped up the juices from the chicken dish with crusty Italian bread.
I know very little about regional US cooking, but if jambalaya is an improved, more complex, version of this dish I'm going to start investigating!

BUT tonight - I made a pork roast...I got it for a song yesterday and cooked it in the crockpot today. I had no clue what to do with it when I got home.
I made a rue - a nice brown base added minced garlic and parsley and a little bit a sherry - then I added some quartered artichoke hearts and a little parsely - I sliced the pork and made linguine and tossed the lot together with a little bacon crumbled on top.
and of course a salad...it was very plain - cucs, maters, romaine, little goat cheese and balsalmic vinagrette...
I have to tell you that I am quite pleased!

Tonight: 2 of those Lebanese spinach & cheese turn-over triangles with babaganouj (sp?) , bought from my favourite middle eastern bakery.
Great dinner last night.
I don't usually feed people on school nights, but made the exception for the birthday of a friend, who is going through a bad time. We decided to invite her and her husband, and child - my cute godson, Liam, 16 months.
Because there was limited time, I decided to do a quick chook (chicken for the non-Australians). Used a Jamie Oliver, I think, recipe. Prepared in the morning, so ready for the oven when I got home.
Mix butter, pancetta, thyme and lemon zest and squish under the skin all over. Put the whole lemon, sans zest, in the cavity - with any remaining butter mixture and bake on a rack. Used 2 chickens (possible extra guest) and they both just about disappeared. Served with kumera, pumpkin and carrots, all roasted, and asparagus.
Damn - it was good.
Just gnawed on 2 chicken carcasses for lunch!
