@Dutchy,
Sounds great, Dutchy.

Tonight, here: Grilled (outside!Very Happy) some of the fabulous pork, fennel & gently spiced sausages from the new local butcher I've recently discovered ... plus steamed potatoes tossed in a little butter & ground pepper (with toasted almonds on top - I can't resist the almonds!) & steamed broccoli. Not bad at all.

@msolga,
wholewheat spaghettini

I tossed a giant mushroom and 2 tomatoes, all coarsely chopped, into the pot with a bit of butter to sautee. Mixed in a little, mmmmmebbe a lot, basil pesto. Threw the spaghettini back into the pot with all of it. So good.

Tonight: a sort of "paella-ish" dish. Rice, chicken, corn, peas, red capsicum .. etc. A good fall-back dish when I fancy a healthy (& tasty) rice dish that's easy to prepare. I'm in transition from winter food to lighter fare.

Ate at my in laws yesterday. She is a wonderful cook. Ceaser salad, lasagna, breaded chicken, steamed broccoli, garlic bread. Some sort of pumpkin sheet pie/cake for dessert.

@alex240101,
Oh, the pain, looking up at what I posted three days back.

Peanut butter and jelly sandwich.

@alex240101,
Alex, I could live on peanut butter -- in fact that's what I took for lunch today. Last night -- small pot roast with potatoes, carrots, parsnips and cabbage wedges all smothered in onions. Used leftovers tonight for hot roast beef sandwiches and made a salad. Still enough roast beef to make beef barley soup (which was the reason I bought the roast to begin with -- got a hankering for beef barley soup).

Endy, if it tastes good, then enjoy!
Far better than throwing your leftovers out, or losing them in the freezer like I do! Embarrassed

So, Tai .... there's roast beef & barley in this soup (0bviously). Could I ask what else is in it & how to go about making it? I'm interested ( my cultural eating/cooking habits are quite different. And I wouldn't mind learning a few new tricks! Very Happy )

msolga:
Noticing the storage jar of barley in the cupboard prompted purchase of the roast! I had no real recipe/game plan in mind. So...I'll probably dice the remaining roast and throw it and a handful of barley in the crockpot (so I can ignore it) with store-bought beef broth. When the barley's chewy I'll add leftover roasted carrot and parsnip and carmelized onions, ground pepper, maybe some Worcestershire sauce? The barley will thicken it a bit. It's a wait and see soup! (Maybe you're familiar with "Scotch Broth" made with veggies, barley and mutton?)
