An idea for your mushrooms, ehBeth:

We had grilled mushrooms, onion, zucchini, red peppers and swiss cheese on ciabatta-type buns toasted in the George Forman grill c/o younger son who volunteered to make dinner. Delicious!

I could use salsa for the missing zucchini

orrrr - I've got some black bean dip and a couple of avocadoes

hmmmm

black bean dip spread on the buns ... cheese ... avocado slices ... salsa ... grilled shallots .... grilled onions ... grilled mushrooms ... then press the sandwiches in the grill!

Talapia. Baked. Not decided if I'm going to coat. Must be artichoke season somewhere. Picked up two beautiful, gigantic ones, for a buck. Side dish of pasta. Probally, just a light garlic sauce on that. Spinach salad, with hot bacon dressing.

Went out with the hamburgers tonight who are in town for a visit.

We went to Lai Wah Heen which is just outrageously good.

We started with

Peking (Beijing) Duck (Two courses, sixteen pieces for 2 to 6 guests.)

First course: Whole duckling fried to a crisp and freshly carved at your table. Served with finely shredded scallion and cucumber on steamed rice crepes.

Second course: Crystal Fold - wok-fried minced duckling, assorted vegetables and fried noodles wrapped in crispy fresh lettuce leaves.

Tonight's fare was medium pasta shells with a shallots/mushroom/artichoke/white wine/roasted tomato, pepper/mild chile sauce.

I'm getting hungry reading about your dinners,Beth and osso.

Tonight I'm going to make salmon and with it I'll serve a salad of spinach, thinly sliced fennel, roasted asparagus, and parmigiano shavings. The dressing is simply lemon juice and olive oil. It's my take on an Alice Watters recipe (she used articokes) and outrageously good.

Oh I love melting butter, adding fresh garlic, pouring it over fresh baked bread, sprinkling with fresh parmigiano and pecorino romano, and baking until bubbly.

I feel so healthy! I just ate a huge store bought salad of mixed baby greens, slivered almonds and goat cheese covered in a blueberry vinaigrette. I had a side of fresh black cherries and blueberries. Yum!

Marinated for twenty one hours, seared, then grilled medium rare lamb chops, rice pilaf(moist, not dry), bibb salad, with cukes, tomato, scallions, chi-chi peas.

Found about 30 black morels up north over a four day weekend, I think I was too early. Found about 15 HUGE yellow morels only a few miles from my house. I also bought 1/2 pound of mixed morels for only $10... I think they messed up on the price (usually they are twice that).

Found a TON of false morels (Verpa) on the up north trip. That reinforced my thinking that we were early. Didn't get back up north. They are still picking up in the NLP and the UP, and Canada.

big fat juicy hamburgers with sweet onion slices, tomato, kecthup and mayo on a kaiser. Accompanied by grilled portabellos served with a onion broth reduction. Lotsa ice tea , sweet.
