Dinner tonight - or last night.

My italian housemate is leaving us after 3 years. She will be here for just one more month. So, she wants to have lots of dinner parties before she goes. We'll be having one tomorrow.

We are having:

Bruschetta, ala us - several herbs, garlic, grape tomatoes tossed with olive oil, salt, pepper and french feta over sliced bagette. Probably will toss in some toasted, chopped pinenuts.

Risotto of some sort, I think she decided on asparagus.

Salad of her making.

Berries and cream parfait, ala me - I made a simple syrup with water, sugar, honey and chambord, simmered blueberries, blackberries, raspberries and strawberries and a couple sprigs of thyme. Tomorrow, I'll mix creme frais with lemon yogurt and layer the berries, cream with angel food cake. And I'll even garnish it with fresh raspberries, blueberries and thyme.

Tada! I want flowers.

Sounds yummy! I love bruschetta!

And I loooove that kind of dessert! It's my favorite kind, fruit and cream over a light angel food cake! It's sweet, but not icky sweet.

The whole meals sounds delicious and filling, but in a nice, light way.

Good choices!

Surprised Just discovered an almost identical thread to this one, I started way back in 2003! I'd forgotten all about it! During an A2K lull, you might to interested to see what some of you & others (some no longer with us <sigh>) were having for dinner 2 years ago.:

Anyway, lovely to read some of Cav's words of wisdom & inspiration on food again! Gosh he was good & such fun, too. So sadly missed. Sad

Tonight I will be cooking for the lady.

Shrimp linguine with saffron, tomato, red peppers, and peas. Garnished with scallions. I got a free loaf of whole grain bread with the purchase of a nice checkered shirt at the thrift store today, so we will enjoy bread, too. Maybe salad; red wine definitely.

soft taco bake

sun-dried tomato tortillas, cut to fit the casserole dish (the scraps will reappear)
ground beef cooked with chipotle/seasonings to make a goopy sloppy joe kinda mess
sliced portabellinis
diced olive bits
diced sundried tomatoes
freshly grated mozzarella
chili con queso from a jar

about four layers of tortilla, chili con queso, meat, mushrooms, olives, tomatoes, mozza

top layer of the tortilla scraps and the last bit of grated mozza

baked about 20 minutes at 350

served with fat-free sour cream, salsa with pineapple, green onion

no avocado/guacamole today Sad

the whole mess was verra verra tasty

Makes me think of dys and his oft-mentioned Frito Pie.
