Spaghetti squash soup.
Take one baked spaghetti squash, get rid of the seed part, fork out the 'spaghetti'.
In retrospect, I would have cut up the "spaghetti" into small bits earlier, but it's not that important.
I made a chicken broth based soup with chopped garlic, chopped onion, chopped celery, previously sauteedin oil, simmered.... some tomato sauce left over from using canned whole tomatoes elsewhere, some previously sauteed tofu, some slivered parmigiano... and the cooked spaghetti squash.... and scooped that into a dish with a slice of italian country bread.
Good.
We had bratwurst from ALDI fried slowly in a pan with a lid (we're not too keen on frying smells in our house) potatoes mashed with a little butter and milk, and steamed broccoli. Tomato sauce.
Not
haute cuisine, but quite good for a winter's evening.
I had fried rice last night.
Tonight, most likely chicken mole (mo-lay) with rice and beans. Had some leftover mole in the freezer from a previous dinner, just brown some chicken and stir in the sauce. Made up a big pot of refried beans yesterday that came out really well.

For me, it will be lasagne from La Pergola. I am not able to cook yet and BigDice delivers
How much oil? About 2 tablespoons to start with. If there isn't enough left after you remove the chicken, add a little more before you cook the veggies.
Thanks, cjhsa. I wasn't sure if the chicken required a deepish fry, with excess oil removed or the more shallow option.
