I'm a very primitive, no-grill person, and have been too lazy to check out my broiler. I put the oven on at somewhere around 375-400, let it heat up for a bit, take my smaller cast iron frying pan, do or do not put some olive oil on it, some coarse salt, the steak, and check it re timing based on the steak thickness. This is a personal conflict. An old friend said NO OIL, just salt and then the steak. Sometimes I put a little oil on the top. Y'never know with me. If there's oil, I might as well toss on some garlic..

A friend & I celebrated by sitting on Williamstown pier, watching the ships while being fanned by an exquisite see breeze ... while eating the best fish & chips I've had in ages. Perfect!
Tell you what, though .... pretty aggressive, predatory seagulls in those parts! A hoard of them watched every single mouthful we ate, while waiting for their share! Cheeky devils!

I was going to make a pumpkin lasagne for dinner tonight. Had all the ingredients & was ready to go. Then, while I was down the street shopping, I bought two ciabatta rolls, hot from the oven. So I got home & had one, with salami & tomato. Yum. Then a second was absolutely called for! ....
Oh well, pumpkin lasagne tomorrow night is fine, then!

Spicy Chicken with green chiles and onions

Four large boneless, skinless chicken breasts
2 cinnamon sticks
8 whole cloves
8 green cardamom pods
salt and pepper
oil

1 large onion, sliced
2 or 3 jalapenos, sliced with seeds
1" piece fresh ginger, cut in small strips
1 large clove garlic

Sauce
2 Tbsp tomato paste or catsup
1 Tbsp dijon mustard
1 tsp garam marsala
1 tsp cumin
pinch cayenne
lemon juice
1 cup heavy cream

In a heavy frying pan heat the oil and hard spices. Season the chicken with S&P then brown on both sides. Remove to a baking dish leaving the spices in the pan. Add more oil if needed and the onions, peppers, and ginger. Saute until limp. Add the garlic, saute 20 seconds then add the sauce, stirring well. Continue stirring until thickened, about three minutes. Pour veggies and sauce over the chicken. Bake the whole thing for 25 minutes at 375F, serve with rice and a veggie.

This is our favorite meal. It is even better with wild game birds like pheasant and partridge.
