@farmerman,
They're normally filled with cream, but you can fill them with almost anything, the snap itself is a brittle ginger flavoured biscuit.

This is a link to a recipe. Remember UK measurements so you'll need to convert them to US.

I've not had cannolis, I didn't even know they existed until they featured in an episode of The Sopranos I saw last year.

I know, I should have seen the series long, long ago.

I have seen them all now.

That's why it's great to have Italian friends, if you aren't lucky enough to be in an Italian family.

When I was a kid, one of my girlfriends was Italian. Her mom invited me to stay for dinner one night, and she had made lasagna. I thought I had died and gone to heaven. In those days, pizza places weren't even all that ubiquitous, and I had never been to an Italian restaurant, so I didn't know lasagna even existed. I was such an enthusiastic dinner guest, I soon got invited back, and this time her mom made eggplant parmigiana. Don't ask. Smile I was ready to move in with them. Laughing When I was older, the cannoli were a treat an Italian boyfriend showed up with one night. The romance didn't work out, but he will forever have a special place in my heart, thanks to those cannoli.

While everyone's checking out the cannolis I'll grab some of the unfilled brandy snaps. Much like cannolis, I prefer brandy snaps empty and crispy.

I'm pretty sure that was a well-known scene from 'The Godfather', definitely not 'The Sopranos'. It was said by Peter Clemenza, whose wife asks him to bring home a few cannoli.
