Foxes U-Bet does make a malt syrup, but purists would never use that in an egg cream. Of course, if you made it in the privacy of your own home, and no one knew about it.....Under such conditions of secrecy, I myself have been known to substitute orange flavored seltzer for plain seltzer in my egg creams...
but, don't breath a word about that to anyone.
And, to be really authentic, the seltzer should come from a pressurized cylinder bottle--if you can't get it directly from a fountain--
that duplicates the carbonation oomph of the old time bottles
