but that's a false representation,
if he only instructs ONE Martial Art

One who teaches karate, even one style of karate is a martial arts instructor. Saying 'martial arts' doesn't suggest that the person teaches more than one type.

The vocation category is Martial Arts.
He could also say: I teach Language Arts, 8th grade literature.
