For those us into a bohemian lifestyle, the best pizza is a Good King Wenceslas:

Tomato base, olives, capsicum, pancetta, prosciutto, julienned snowpeas, vintage cheese, mushroom, spanish onion, english spinach, whatever's available, hold the anchovy.

Deep pan , crisp and even.

I might make one on March 14.

Do you guys have an opinion on square cut (aka tavern cut) versus pie slices (triangle cut)?

I do love and appreciate a good Sicilian slice or Grandma slice of pizza (they're designed as rectangular slices for whatever reason).

I think the pizza at Pizza by the Inch is closer to the tavern cut style of slice (the whole pie being oblong). It's good but I tend to crave regular pie slices when dreaming about pizza.

There was a recent argument on my facebook about square vs triangle slices. It went on for something like 60 comments.

I came down on:

1) there is no bad pizza
2) squares vs triangles do not change how the pizza tastes
3) people who have time to argue about this also have time to just go get a square or slice of pizza and that's a much better use of time

I will not turn down tavern sliced pizza (especially if its free or bought by other people for sharing). I, however, will not likely find very much of it in my pursuit for pizza here in NYC ... so I will likely never buy it myself (statistically speaking).

I agree with this.. Unless it's a double pepperoni with extra cheese and garlic. Then I become confused on which to devour first. It's easy! First slice, eat the crust (becoming familiar with the flavor to determine if it requires more garlic) then the slice. Second slice, start with the main, then the crust.

Continue in this manner until either full or out of pizza.

Next up - is pie crust better than the pie? Usually, for me, yes!

I used to babysit for a family where they always ordered a couple of bacon, triple cheese, garlic pizzas just before I arrived. those were hard to eat - there was really much cheese. I used to cut the points off, eat the crust, then put the points on top of the least goopy part of the slice and have a folded sandwich. tasty but so so messy.


pie crust vs pie? tough one. if my mother made it, you'd discard the crust, she couldn't do pie crust or muffins - always overmixed them. graham cracker crusts became my favourite - and I do prefer those to almost any pie filling/topping.

havent had a pizza in over a year and reading the above and seeing the pictures, I gotta say , Im not having a splurge urge . I there something wrong with me to not even crave a pizza any more.

NOW , whole wheat Penne slovred with a white clam sauce (redolent of parsley, garlic, romano cheese,with a tiny back flavor of a sweet white wine like a sauterne in the sauce). That is a whole nother thing.

In my late teen yout' wed Sunday ride our bikes to Reading Pa and get in as legal age members of the Victor Emmanuel II Societies. (Nobody'd raid them)> they would hve Pizza Siciliani . With or without minnies and onion or sausage and onion , or just plain cheese. They were fired in an old wood oven under the Schuylkill River Bridge.
They live in my memory as THE BEST pizza Ive eaten.
Now, Pizza is pretty much all the same, like Chinese or Mexican (You cn still find excellent examples but they usually dont last because they become victim of their own popularity). ESpecially in Washington DC.(everything down there becomes flavor of the yer and they start getting sloppy as the owners start tiring out and taking time off)
