I can see the difficulty in this problem. The pizza is just too tempting to hold onto it long enough for it to be an artistic model for inspiration and such.

and if you find a pide joint, look around for a nearby Turkish grocery store and see if they've got simit

they're like skinny, all-edge, super crusty/chewy bagels

so amazing

usually Turkish breakfast is a really good deal is you can find a Turkish restaurant in your part of town (I suspect you'll find a nice Turkish neighbourhood)

The pides look like a bunch of strombolis with their insides exposed. What kind of meats? I hope no goat or sheep.

Ive had a pizza already that was made with layers of falafel dough, very crispy but with the sauces.

pide fillings/toppings can be whatever you like

I'm a fan of feta/spinach on one half and on the other half spiced minced beef with an egg baked on top

stromboli is made with bread dough - too dry for me usually

pide bases are more like doughy pizza - I like the stretch of a good one

I'm late to trying three day rise after no/knead pizza. We'll see. Tomorrow is day three. I may have to put it off, what with my tamale escapades, but apparently day 4 or 5 is ok.

They're pretty new to Toronto - we've had a lot of Turkish immigrants in the last decade - they're finally developing a neighbourhood. I'm beyond giddy that it's really close to us. It's like Greek food kicked up a taste and technique notch, with a lovely Afghani/subcontinental influence.

I really wish I'd been on the ball enough to go to Istanbul 20 or 30 years ago. It must have been amazing.

And I could whack myself when I had a chance to go to Japan and didn't.. My teacher/later and now friend knew and still does, so much - too long to describe. I could have used credit - much better than for a refrigerator.

We still talk via email.
