Lots. I'd say I go through about a gallon and a half of tap water and diet coke a day.

I toss back at least 8 8 oz glasses of H2o (sometimes it's in the form of decaf tea). Often more.

Thursday Mar 5 -

tuna and mayo on 1 piece of 9 grain toast
2 coffees with milk splashes

dilute grape juice
mineral water

2 bowls of chicken melange, a concoction involving previously baked chicken wings, sauteed chopped big onion, previously cooked brown rice, frozen green beans, chicken broth, and a can of what turned out to be a mild masala sauce, by Jyoti.

chocolate milk and rum on lots of ice, one glass.

I drink 6-8 8 oz servings of water, plus usually a few servings of decaf tea, or Fresca, or Crystal Light.

Wednesday

Cajun Dirty Bulgur

2 T canola oil (I cut that down to 1 tsp)
1 cup chopped onion
1/2 cup chopped green bell pepper
2 cups uncooked bulgur
1 pound ground beef (I subbed ground turkey - it tastes good, but beef would be a better visual contrast)
4 cups chicken broth
1 tsp cajun seasoning
1/2 tsp garlic powder
1/2 tsp celery flakes (I used 1/2 cup chopped celery)
1/4 tsp red pepper
1/4 tsp black pepper

Heat oil in medium saucepan. Saute onion and green pepper (and celery) until tender. Add bulgur and cook, stirring, until slightly toasty. Meanwhile, fry beef in skillet (season to your liking), breaking into small pieces. Drain well. Add beef to bulgur with chicken broth and all other ingredients. Bring to a boil. Lower temperature to slow cooking. Cook covered until broth is absorbed well in bulgur - 35-40 minutes. (It only took 20 minutes for me, so be sure to check it sooner.)

I've been running all week but not the kind of running where you are actually moving in any direction.
Friday I threw a little Scrabble party for two friends. I made the meal. I haven't cooked for anyone in awhile and there was some daunt in my head.

Friday;
B: Regular
L: cheese and two eggs, coffee (which looks like breakfast)
D: Boiled Shrimp. (made the shrimp boil with extra pepper and lemons, bay leaf) with Gold's Horseradish Sauce. Smacking good.
Little teeny canapes with veggie stuff (eggplant and pepper flakes.)
Martinis (Frozen Vodka, lemon twist or Olives), Vodka Gimlet.
Pasta with Olive and Caper Sauce. *
Lemon Roasted Chicken Thighs.
Roasted Garlic, crusty bread and a big Caesar Salad.
St. Francis Cabernet 2005
Rodney Strong Merlot 2005
Dessert: Chocolate Bread Pudding, Fruit cookies and Macaroons.

* Note: Capers, I remind myself here, are as salty as fish eggs.

The Scrabble game was intense, as it always is, with all of us ending up within three points of the others. I was third, those girls are tough.

D: Left over pasta, left over chicken thigh.

219/186.4/yes. that's a pound up for the week.
Today starts two weeks of really thinking about this body and mind of mine.

Lunch was out, at a local Irish pub. We got the walking in and heard a lot of brogues, but the food was eh and there was a boatload of feta. I had to really pick it out in order to limit the serving size. Don't think we'll be back there for a while. Unfortunate.

Made the inside-out eggroll casserole tonight. Awesome! Will be making it again with ground turkey as the protein soon. Also bought some herbed tofu as a protein alternative for it. It will become a menu staple. Tasty and freakin' good for us.

Lunch: Vietnamese vegetable salad with shitake mushrooms and tofu

Dinner: "Sushi Italiano": thin zucchini wrapped around a mixture of gorgonzola cheese and vegetables; eggplant lasagna.

Nice piece of warm apple torta, not quite as big as last time, depends on how I slice up the baking dish of it.

brown rice/sauteed onion/green beans/2 chicken wings/masala broth

apollonaris water

big fat bowl of spinach sauteed in butter w/ricotta/fontinella/lemon juice and tossed with elbow macaroni

red wine and grape juice sangria on ice
