What is it that you do at this camp?
refrigeration wouldnt be a problem.
Post menues if you get half a chance Mame. Remember dont finese too much. Keep it simple, solid, wholesome and filling for working men.
Is that a sattelite dish on the long drop. (loo)
That's a lot of snow, Mame. What are they doing at that camp?
TTH: I cook here.
Dadpad: Yes, it is, which is how we occupy ourselves when we're not cooking, logging/splitting core, and drilling, thank God. We also have a toll-free telephone. Yay to the new style of camps.
Menus: yesterday we got in at 5:30 p.m. and after scrubbing down the kitchen (picture it - 5 guys on their own here for 10 days) and putting away the food, I made a roast with garlic slivers stuffed inside, steamed asparagus, mashed potatoes (short on time), baked squash and a salad (spinach, green leaf, red peppers, feta, pecans, dried cranberries, and cucumbers).
Today, French toast, sausages and bacon, canteloupe and grapes for fruit, plus the ever present variety of yogurts, bagels, crumpets, etc.
Lunch, they're on their own but there's a plethora of deli meats, cheeses, lettuces, plus tomatoes, etc., all on multigrain breads or bagels.
Dinner tonight is marinated lemon sole served with scalloped potatoes and cheese, turnip-carrot mash, broccoli and a mixed berry cobbler and ice cream for afters.
Tomorrow they're having a wife-saver egg casserole with sauteed onions, mushrooms, red peppers, sausage and cheese, accompanied by chocolate chip or blueberry muffins, with oranges, bananas or apples for fruit.
There are also homemade cookies, a plethora of beverages, snacks, and nutrition bars.
It's fairly simple but interesting, I hope. Tomorrow I think I'll make them chicken dijon, rice, and two vegs + the salad. Maybe banana cream pie for dessert - I seem to have ordered quite a few of those!

You are making me hungry. What you cook sounds really good (those guys are lucky). How long do you stay at this camp?

It's way too cold for me. But the menue sounds delicious!
Drilling for gold - that sounds like taken straight from an adventure movie for me sitting here in central Europe...

There is so much exploration and mining going on in BC and Northern Canada. It seems like everyone is either working in a camp or supplying one. It's great for these small communities.
This program will last 4 - 6 weeks, totally weather-dependent. If it gets too warm, the drillers can't drill so we have to quit.
I think my next job will be in the Lac de Gras area in NWT, late April or early May, and it should go for several months.
You are way more woman than I could ever dream of being. One look at the cold sleeping quarters and loo and I'd be outta there, although I have to admit it looks like a beautiful part of the world.
My hat is off to you!
How many guys do you have to cook for at each meal?
Oh, and don't forget to put the cream cheese away.

We were at a concert in a church tonight. Setanta, our friend K and I were the only audience members not wearing our winter coats inside the church.

Here's am effective method of stovetop/oven smoking, handy for camp.
Fish on the cake rack in a roasting pan. Wood chip and herb in the bottom of the roasting pan. Score the fish on both sides. Stove top until the pan begins to smoke nicely. cover the pan tightly with foil to get a good seal and into a preheated oven for around 15 - 20 mins.
I f you need a tree faller.... I'm game.
