@ossobuco,
If you get one of these suckers , you will eat more apples. e get baskets of em at our nighbors orchrad and our falls are loqded with apple dishes and raw apple slices (ith cinnamon dust)

TThe peelr/corers are neat gizmos and theres always a slight modofication that can be made to make em better (like spreding the tongs that hold the apples .This increases the way that the apple is held as it gets stripped of skin)

There are some maintenance issues though. The "peeling knife" needs occasional sharpening (like once a year if you do more than a few bushels of apples.).

Also. I keep ours firmly bolted to a thick cypress plank and held with wing nuts. SO I can remove the peeler at the end of the season and run it through the dish washer.

and yes it is!

Ingredients
3 tablespoons olive oil, plus more for greasing
3 medium yellow onions, sliced into ¼-inch slices
Salt and pepper, to taste
1 tablespoon chopped fresh rosemary
2 tablespoons cider vinegar
1½ pounds Yukon Gold potatoes, peeled and sliced into ¼-inch rounds
1½ pounds tart apples (Granny Smith or Pink Lady), peeled, cored and cut into ¼-inch slices
2 tablespoons unsalted butter, cut into small cubes

3 tablespoons olive oil, plus more for greasing
3 medium yellow onions, sliced into ¼-inch slices
Salt and pepper, to taste
1 tablespoon chopped fresh rosemary
2 tablespoons cider vinegar
1½ pounds Yukon Gold potatoes, peeled and sliced into ¼-inch rounds
1½ pounds tart apples (Granny Smith or Pink Lady), peeled, cored and cut into ¼-inch slices
2 tablespoons unsalted butter, cut into small cubes

1. Preheat the oven to 400. Lightly grease a 13 x 9 x 2-inch baking pan with a lid. If you do not have a lid, use aluminum foil lined with parchment paper to create a lid. Set aside.

2. Heat the olive oil in the wide skillet over medium heat. Add the onions and sauté until translucent, about 5 to 7 minutes. Sprinkle with salt and pepper, then stir in the rosemary and cider vinegar. Raise the heat to medium-high and cook, stirring occasionally until the onions begin to brown, about 7 to 10 minutes. Be careful not to let the onions burn. Let onions cool slightly.

3. In a bowl, toss the sliced potatoes and apples with the onion mixture, sprinkle with some salt and pepper.

4. Lay the potatoes and apples evenly in the prepared baking pan. Dot with butter, cover, then bake for 25 minutes or until the potatoes are tender. Uncover, then continue to bake for 10 minutes or until well browned on top. Serve.

I think I'd switch the rosemary out for a different herb, but I'm going to try this.

@ehBeth,
you could have asked. Apples are often the very thing that make many other things, edible.
Like saurkraut for example.
Or chutneys (or is it chutnies?)
ham and cheese sammich with p nut butter and tosted apple slices (with a bit o cinnamon)

Himmel und Erde was a childhood favourite of mine ... it's sort of three separate good things eaten together

@farmerman,
Those "knepp" are here in Germany a special kind of Swabian noodles (Spätzl), namely "(Spätzle) Knöpf".

In the Alpine region Spätzle with apples ("Apfelspätzle") are very popular

But since I'm a sweetie and not from south Germany, I do like "Bratapfel" (baked apple) best
