I'm discovering something interesting, reading these posts. It seems that a lot of 'Murricans are familiar only with the kind of beets that come in a tin can. No wonder they hate beets! Those raen't beets any more than Velveeta is cheese. Beets have to be purchased fresh, recently picked, preferably from a farmer's market or a roadside stand. You want them to keep, pickle 'em yourself. Beets rule!

I'm more worldly than that, Andrew: I also know of beets in a jar. And I've never eaten velveeta.

I wonder what beets in a jar would taste like with a liberal coating of velveeta cheese?

Beet greens apparently have a life too...

I've cooked collard greens, mustard greens, chard, kale, and so on, but haven't ever cooked beet greens.

May be working around to trying that.

Any of those would go good with pancetta, if I ever could get italian pancetta again. I think the good pancetta must have been outlawed with the euro rules...

Of course you buy them fresh from the market, what else?

Just because gustav only eats fried beans from the can, doesn't mean
the entire population has to eat like that.

Well, for me, they've always been too sweet. But, like thanksgiving dishes in the US, and beans from boston, sweet is a cultural thing - though I gather beets are sweet to start, if pulled at the right time.

Eh, I'll explore a bit one of these days.

Not with pink herring, though. (I already like herring, just not pink).

Yeah, Osso. The only thing I eat sweet on a regular basis is crystallized ginger. I'm addicted to it. I hope I'm not eating too much sugar. Oh well, it's worth it, and ginger, like tumeric, is a good anti-inflammatory food.
