You really do need to talk first. Spend a lot of time at dinner being interested in her likes and dislikes. Act like you did when you first met. Say something interesting about yourself that she doesn't know, or has forgotten. Try to remember what you used to talk about when you were younger.
It would be super-special if you could give her a little poem you wrote during dinner. It doesn't have to be great....it could even be dumb, as long as it was romantic and you wrote it yourself. Ooh....I can imagine what that would do to her!
