Last night I made one of my el quicko/easy peasy summer dinners: cous cous (with parmesan & baby spinach leaves stirred through) with roasted pumpkin, Roma tomatoes, mushroom & very thin slices of onion. Then slivers of toasted almonds & parsley on top of that! Served with a hastily made yoghurt, garlic & parsley & mint "sauce". Very nice & perfect for a no hastle summer dinner!
Speaking of "no hastle": I placed a sheet of baking paper under the vegetables in the baking dish, before sprinkling the lot with some olive oil. (A tip I read in a cook book recently.) I must say this cooked the vegetables perfectly (nice & juicey!) & made cleaning & washing the baking dish dead easy. No scraping & scrubbing!
