Cooking a turkey and all the fixings may sound crazy (and it is!) but spending time cooking and thinking about the people and things you're thankful for doesn't require an official holiday.

mini club salad from the deli counter with a scoop of tuna on top
a small handful of honey/fig triscuit
a couple of mugs of water

the salad was a cousin of this

I admit it. I'm into the salad shaker thing. Have been for years. Use my old Tupperware shake maker. It was worth saving it when I went off shakes.

Very simple dinner tonight.....chicken salad made from left over roasted chicken and a tomato, cucumber and onion salad with a vinaigrette.

Set picked up some lovely Halal chicken quarters yesterday. I marinated them in half a bottle of Newman's Own Sesame Ginger dressing and a splash of rice vinegar. threw them on a baking sheet for an hour on a bed of crushed rice crackers (the flat ones, not the puffed ones). Swoon-worthy results. The chicken was savory and juicy. The juices from the chicken turned the rice crackers into a rice version of scalloped potatoes. Bok choy and orange segments on the side. So easy and delicious.

I had a Big Mac value meal last night. First time I ate McDonalds since going to Washington DC to see Jon Stewart and Stephen Colbert at their Rally to Restore Sanity and/or Fear back on October 30, 2010.

Had to get something quick as I was returning to work (not having lunch) on a 12 hour shift yesterday.

tonight I had sliced mini yellow sweet peppers, rainbow cherry tomatoes, and cheese toast. then ...some clementines and ummmm another clementine

I have a roast in the oven. Having it with mashed potatoes and gravy. I'm also making Roasted Brussels Sprouts With Garlic. Following This Recipe

A little hint to make the roasted or fried sprouts taste even better. When you are preparing the meal, soak the halved sprout sprouts in a cup of some really good GINGER BEER. about a half hour will be enough. Then pat and fry . Add capers about 30 seconds before you take the sprouts out and srve with a few grinds of some crunchy flaked salt

using bagged beet slaw (and Johnsonville mini smoked sausages)
