Have you tried the bagged Fresh Express baby spinach, osso? I don't mean their bagged salad kits, but just bagged baby spinach? Albertson's carries it. It's the best fresh spinach that I can find.

(I know Albertson's carries that brand because I was in Albuquerque for a couple of days in the spring and popped in for some salad ingredients, cold cuts, etc. before we hit the road again.)

Tonight I’m going to slow cook a beef brisket with mashed potatoes and green beans. I found an easy recipe online. Just sprinkle a pack of onion soup mix over the meat with a little beef broth, slow cook it for two hours. Sounds easy enough.

my experience with brisket is that the longer you slow cook it, the more tender it gets.

two hours might be light...

if you keep it moist, I would not be afraid to go 6 hours. on a low temp...


you might try writing the recipe down in steps as you do them.

Yes, slow cooking for good 6 hours is more like it. Also, give some onions, garlic (real one) and carrots into the pan, it makes for a better sauce.

That sounds good. I think this one will turn out okay. I can smell it cooking. I’m going to mash the potatoes with butter, milk and a table spoon of mayo, that’s how my mom use to make hers.

My dinner came out fabulous. Even though I only cooked the brisket for 3 hours it came out pretty good. Probably would have been tenderer if I had cooked it longer but they both ate it and loved it. Marco said I could make it again anytime.

I never enjoyed cooking but it’s different when you’re cooking for someone else, that’s more enjoyable. Tonight Marco is cook chicken piccata, he’s made it before and it’s delicious.

ShakenBAke extra crispy on chicken thighs (1 each). Corn on the cob (2 ears each)
Sliced fresh garden tomatoes with balsamiC vinegar and a jot of curry powder (1 tomato each, sliced into cubes)

I've made spaghetti for the kids (daugher+friend) for a late lunch - with bacon and tomato sauce. Now 2 hours later, they just came up for seconds....
I hope they're still hungry for dinner!

Concocting a tomato jalapeno onion roasted garlic black pepper broken pasta meatball soup, as we speak. Considering adding some previously cooked black eyed peas. Probably won't.

Edit - I did add some black eyed peas, but not enough to take over the soup. Added some crusty sour dough bread (not much, but it's an enhancer).

'K, that tastes good.
