Me, tonight:
I must quickly think of something super, super easy (!) to do with a (defrosted) chicken breast ... & a choice (from my crisper) of assorted greens. I don't care if it's brilliant or not! Fodder is what I'm after. And I suspect fodder is what I'll get! Neutral

I am fading fast, tonight. Tired.

slice it really thin, stir fry it with the greens and a dash of teriyaki or soy sauce....enjoy.

Just a few additions, like garlic & a wee sprinkling of chilli flakes!

Eating it now. Not bad! Very Happy

Luckily for me, there was some left-over steamed basmati rice in the fridge. Zap in the microwave!

And, phew, I made it.Surprised

Early night tonight, I think!

This evening I made up my own recipe.
We had some roast beef left from yesterday, so

Poached some stoned, chopped dessert prunes in balsamic vinegar and organic soy sauce, plus a little water.
Fried/braised some finely chopped carrot and onion, one of each.
Combined the two above, when the carrot was softened.
Sliced and diced some roast beef, enough for two, salted.
Plenty pepper added to the mix.
Combine all ingredients on a big frying pan with a lid, to heat the beef through.

Serve on a bed of nice rice, with peas and broccoli segments

Excellent! No complaints.

I am about to go make chicken w/ herb rice and broccoli...easy and yummy - comfort food to me. And of course sweet iced tea Wink

I'm going to do something with some calves liver tonight. No idea what. Will think about it during dance class tonight. I think roasted potato wedges will be on the side regardless. I can ask Set to get those ready.

Last night's effort could be accurately described as a bit of a hotch-potch!
I did something vaguely resembling a frittata with: one chirozo, a small handful of left-over pumpkin & almond ravioli, lots of sliced spring onions, a little sliced red pepper, a small handful of baby peas & some eggs. (Not necessarily in that order. )
Time was of the essence, you see! Wink
Actually, it wasn't half bad for a determined clear-up of fridge left-overs! Surprised

Forgot to mention the potato wedge idea to Set before I left for class yesterday, so it was sandwiches and pickles.

Tonight was calves liver with roasted potato wedges.

A bit of bacon to get the pan started, 4 finely sliced onions, a handful of diced carrot, about half a pound of sliced portobellos, a pound of thinly sliced calves liver ... let it all cook it's way down ... then about a quarter cup of low-sodium beef broth and 3 really hearty shots of balsamic vinegar, a small handful of herbs. The onions were nearly candy <eyes roll back in head> the whole dish was lovely lovely.

I can certainly understand that addiction, ehBeth!

I currently have an addiction which makes absolutely no sense to anyone not addicted to middle eastern food: turnip pickles! Crunchy & salty & scrumptious!
