This one is simple. My butcher supplied me with almost a four pound bone in center cut loin pork roast. Some fat was left on. I'm slow cooking it with about six ounces of vernors, six ounces water. Carrots, celery, onion, potato, bay leaf get added two hours before dinner.
Once roast is done, I pull out, strain all the liquid. Twice. Add a bit of flour, a few dallops of butter. Gravy.

I never had tomato soup with sardines. I enjoy sardines. I'll have to try that.

I often put sardines in a "fish soup", usually a spicy garlicky soup. It might be rather too hearty for some, but I like it. Not sure if I'll add the pasta with clam sauce or not. For one thing, I have to watch out not to cook the clams into rubberiness. Stay tuned, as the pot turns.

Tonight: a simple omelette. With tomato, fetta, cucumber & spring onion (the green bits) filling. Very nice!

I made the tomato soup but didn't put the pasta with clams in it.

a battuto of a chopped onion, celery, carrots, rapini stems, 6 minced cloves of garlic, sauteed
2 small cans of whole tomatoes, squished
fish broth
some sun dried tomato pesto
a few tablespoons enchilada sauce
1/3? cup chianti
all simmered down;
mushed up sardines in tomato sauce
some previously cooked arborio rice
at the end, some previously cooked and frozen, now thawed, whole shrimp.
That worked.

The sun dried tomato pesto, I would never of thought of.
Nice and garlicy.
I would of preferred clams to shrimp.

...and I might have to switch up tonights menu.

I like both clams and shrimp, but I decided to use the remaining pasta w/clam sauce just as a quickie microwave leftover. Less chance of my rubberizing the already cooked clams.

The sun dried tomato pesto concoction is expensive, but I don't use much at a time. Found some Christopher Ranch bottled sun dried tomatoes recently for not too much money, so I'll try making my own. Naturally I think making them from garden tomatoes in the first place is best, but I haven't become tomato queen yet in Albuquerque.

Yes, Alex, I'm saving the rapini tops for a pasta dish with garlic, anchovies, and chili pepper. The stems were terrific sauteed - I'm going to use those more often. Tastier than broccoli stem slices...
