Gotta give props to Alton....even though I can predict everything he is going to say, he gives very proper restaurant technique that you can use in your home.

According to my wife, Jamie Oliver lost his appeal after he got hitched. Go figure.... Razz

Also, Michael Stadtlander, my old chef-teacher, has a great show on Food Network Canada. Don't know if you get it in the States. So natural, so brilliant....

Many moons ago, a local newscaster got together with Jasper White and made a four hour video called "What Your Cookbook Doesn't Tell You." THAT'S where I learned most of the basic techniques I still use. It's a good thing I retained all of the information I needed because I loaned the video to a friend a few years back and haven't seen it since.

And don't stand too close to a wood stove. I know a guy who once burned his arse and his.....by accidentally brushing past the wood stove and I was calling him "roasted weaner and hot cross buns for the longest time ;-)
