I use the Hoffman sharp cheddar too, but not for grilled cheese (does it melt?). Good ole Velveeta and precooked bacon makes the best grilled cheese. White bread is best but I never have any around, so I use whatever whole grain bread I have.

I was never into the velveeta myself.
A good sharp cheddar or provelone suits me just fine.

it's time again (how many grilled cheese threads have we had - I may explore and pull all the cheese threads back to the top ... just because some people might find it annoying )
gouda and salsa on herb/garlic buns today

It's April ... so it's Grilled Cheese Month!
can't wait to pull one together
I'm thinking extra old white cheddar/summer sausage/grilled peppers inside
maybe grilled onions on the side
