In the sentence:

The food environment, which consists of food outlets, affects food choices, as do social, personal, economic, and cultural aspects.

Should the "do" above be singular or plural? I'm not concerned with the clumsiness of the sentence, just the grammar. Thanks.

You should be concerned about the sentence.

The grammar is correct, but it's a mess.

The food environment, which consists of food outlets, affects food choices, as do social, personal, economic, and cultural aspects.

You need 'do' (plural) because there are multiple (four) additional aspects mentioned: social, personal, economic and cultural. You would use 'does' if there was only one additional aspect to mention, e.g. "The food environment, which consists of food outlets, affects food choices, as does the social aspect."
