Does “Two things are infinite: the universe and human stupidity; and I'm not sure about the universe” mean “Two things are infinite: the universe and human stupidity; I'm not sure about the infinity of the universe, but I'm sure about the infinity of human stupidity”?

You have understood the quotation correctly. Compare with the Yorkshire (England) dialect expression: "All the world's daft except me and thee, and I'm not sure about thee".

daft = stupid; thee = you.

Einstein was being facetious and humorous in that quote. Infinity and the universe were both foils for his main focus...the stupidity of some humans.

My guess is a further look at the context will bear that out.

I expect that later today, I will pass by the house where he lived in Princeton. I try to pass by as often as possible when Nancy and I have dinner in Princeton.

Sorry, no picture. And the way things worked out...we were not able to take the long walk to the other side of town to walk past the house.

But here is a picture of me explaining something to him...can't remember what it was. I think he understood.

But there is a miracle here. I wonder whether you'd like to explain it to us, Frank.
Einstein (1879-1955) seems to be at his seventy in this picture. That is, the picture was likely to be taken in about 1950, 65 years ago.
You've already been in your golden years in this picture. I venture to think that you're as old as Einstein at the time you met him. That is, you're about 70 in 1950 as well. So you would be (70+65) or 135 years old now.
The list of living supercentenarians tells us that both who rank first and second are indeed living in United Stated, but both are female and only 116 and 115 years old, respectively (Jiroemon Kimura and Susannah Mushatt Jones):

Incidentally the idea of infinity has always bothered me inasmuch if anything that can happen, will happen, then if there is the slightest chance of any occurrence, not only does it happen elsewhere in an infinite number of different places, but any situation in which it might occur also falls in that category. So for instance there would be an infinite number of visible Universes identical to ours

For some reason it just seems absurd

No. To Einstein, figuring out the REALITY of existence is a heaven for him. That is why he developed the General Relativity, which Hawking has been continuing to further, whose heart, like Einstein's, soaring in the cosmos.
