I know that some words like CARE are not used in the progressive tenses. But can I say this?:

-When we discussed it while I was caring for her down in Loover, she claimed it was a matter of three days.

I think it quite natural to me. What do Britons and Americans think?

Yes. Using "caring" that way is a normal thing.
