Fashion is an uncountable noun, but often seen in the plural.

If it is used for what the French call 'la mode' (e.g. the fashion industry, the world of fashion, working in fashion, fashion magazines) then it is uncountable but it can also mean (countably) a trend, craze, or vogue. There was a fashion for drape jackets and winklepicker shoes in the 1950s. Fashions come and go, but fashion is eternal. Also don't forget 'the' fashion. It's the fashion for younger commuters to wear huge headphones where I live.
