With apologies to a particular brand of potato chips, not only could I not eat just one... I could not eat just one at a time.I would pop two or three chips into
my mouth, justifying my behavior.

What does "With apologies to a particular brand of potato chips" mean here?
And why using "justifying my behavior"?

The tag line of Lays Potato Chips has long been something like "I bet you can't eat just one." The same idea has been applied to many other irresistable urges.

I won't try to explain about potato chips unless you really don't know, and would like to. They are a type of snack food.

It means that you are apologizing to the brand of chips that uses the slogan for using their slogan.
