The former vice-president of McDonald's Hong Kong takes over from Alex Yeo, who will join McDonald's China as the new president of its restaurant solutions group.

Both will assume their new posts starting from today.

Are the words in bold' needed in the sentence?

Both will assume their new posts starting today.

Keep 'starting' and delete 'from'.

No. "Both will assume their new posts today" is fine. If in the future, "both will assume their new posts on (or starting) December 25th."
