Using waterless pickle bean brine

Reply Sat 4 Sep, 2010 09:27 am
I'll be honest, I left the water out of my bean pickling brine by mistake. Pickling is complete, should I redo the whole thing or is it ok without water?
Thanks, boat1100

@boat1100,
What kind of beans? How does it taste? If it isn't too salty or too vinegary, then use it.

If it is too salty or vinegary, you can probably save them by soaking in fresh water for awhile. They probably won't be good for the canning process if they get too mushy.
