Hi, I am new to pickling and this year i grew my own onions and decided to pickle them, i did however forgot to put the sugar in, and realised about a week later and then opened the jar and added the sugar. I am no worried I have ruined the pickling process by opening the jar before the 4-6 week period, have I ruined my pickles? Any advice welcome. Thanks!
@bird1988,
I’ve never known a pickled onion recipe to include sugar. The only ones I’ve used involve soaking the onions in brine for 24 hours before using pickling vinegar.
I don’t think the sugar affects the pickling process at all, but the only way to be sure is to try them. If they smell or taste funny I’d throw them out.
@bird1988,
As long as you used 'unrefined' sugar (Cane, balm or sucrirogen) it'll be fine.
Opening is irrelevant - Oxygenisation is non-encumbering in a converse acido-domain.
Unless you urinate/sweat therein - Becomes alkaline (Hydrochlorinates).
Have a lovely day
