pickled beets

i made pickled beets yesterday and i'm not sure if i did them right, i boiled my jars and lids, but the jars and lids were not hot when i put the beets and boiled ingredients in it. i put the lids on but only one popped after 3 hours. i then put them in a pot and boiled the jars for 15 minutes. can the beets still be eaten?

you should have had the ingredients in the jars and then boil them in the canner for about 15 minutes. The seals and lids should be on them loosely while they are boiling. Then allow the whole thing to cool and youll hear the pop.

You can redo em, they are a high acid thing (Im assuming that"pickling" included ample vinegar to keep the pH low)
