He's dreaming of thousands of people in the Seattle streets, singing songs and carrying signs, in a "Ghandi-esque mass protest that will shut down the WTO"
What does "Ghandi-esque" mean? I cannot find it in any dictionary.

It means "like Ghandi". Ghandi led protests against British rule of India.

His name is spelled Gandhi.

Vickie, it's a suffix so there couldn't be an entry for every possible combination. Try looking it up as '-esque'.

Here's one example.

I may be splitting hairs, but I think, in this case, it means protests like the ones that Ghandi generated.
