The most important aspect of preparing good fish
is
NOT to overcook it. It shoud be rare; tender n juicy (
not sushi).
So far, the
best fish that I 've ever been blessed to have in my mouth
were in St. Paul, Minn., at the 2003 Annual Gathering
above the Radisson Hotel, a glass, rotating restaurant.
There were 4 different species of fish on the menu,
all of which were
beyond ineffably good.
Applicable English words have just not been invented.
( I had dinner there several times; good desserts, too.)
It fills me with happiness, just to remember it.
