With respect to water consumption in Brazil and Congo in 2000, since Brazil had far more population and arable land than Congo, there was a huge gap between the water consumption per person in the two countries, with 359 m^3 and 8 m^3 for each.

Does it sound odd to you? And which one is correct:"for each","each"or "of each"?

Try "respectively". That means that the first value applies to the first subject and the second applies to the second subject.
