Sure, it's easy.

Take four or five ripe tomatoes, an equal number of hot chiles such as jalapeno or serrano or both, a medium white onion, a handful of cilantro, some sea salt, and a lime. Dice up all the produce (by hand is best) and mix, then add the sea salt to taste and the juice of the lime. Mix and let it sit for at least an hour before eating. Some people add garlic, not me because it overpowers the cilantro.

Sounds good, but you can keep the cilantro--i've seen it greatly overused in trendy restaurants, and i was never a big fan. If i never have it again, it will be too soon.

Doesn't work without it. It's an aquired taste, but pico de gallo isn't if you don't put it in.

Sounds interesting, cjhsa. I'm not a huge fan of cilantro that's draped over the top of foods, but mixed into a salsa, or something similar, it can be quite good.

Thanks for that nice basic recipe.

You're welcome. I didn't used to like cilantro either, but it really grows on you. I've found that women tend to like it more than men at first. Unsure why.

I dislike cilantro also........except in salsa. Sounds good. I'm hungry because so far I've eaten nothing today......gettin hungry. Peanut butter time. Then heartburn time. Yuk, why will I not behave?

My favourite breakfast:

½ pound finny haddock poached, with crusty piece of fresh baked bread lightly buttered- simple and delicious.

If you are on a diet it's perfect, fish- high in protein, bread (the staff of life) calories about 280.

Not a traditional canajun kinda thing, but I do like to have fish for breakfast. There used to be a restaurant that served a breakfast called 'Mess 'o Smelts'. I miss it.

Grabbed a bacon, egg and cheese sandwich at a highway rest stop on the way to meet hamburger and mrs. hamburger. The dogs got most of it. They let me have my GIANT tea (double double - and the guy asked milk or cream - NICE!).

Hi ehbeth,

I'm not a health food person by any means, I like steak, I love a bacon sandwich, but I try to balance things if I can, so I eat simple things for breakfast, and fish is as good as it gets, I've always been a firm believer in fish, no chlolesterol, no fat, lots of protein.

My other fav is cereal of fruit and fibre with added sliced banana, or sliced strawberries, + cold semi skimmed milk.

Can't pick a category. Some days I have some smoked salmon (the dry non-brined one, for anyone who followed a certain smoked salmon discussion) and crackers, or a tuna sandwich. I am with Kev about the fish, good for the morning brain. Some days, usually a weekend day, I have Dutch Babies.... this sort of ballooning pancake thing, toooo addictive. Once in a while a nice bowl of Quikgrits (not instant) with cheese and butter and some chili pepper in it.....

Some days I eat some plums and look around for a cookie, give up, can't find a cookie... Some days I go to work, go in door, drop purse and dog, go down the street and get a latte.

Chili in grits? That's an interesting combo. Not the kind of thing I've ever seen in the south-east. Maybe I'll try some hot red pepper jelly in my instant grits sometime.

The kettle is whistling. Time for a second mug of chai.

I made some grits this morning, reminded by that post of mine. Added several drops of Cholula Hot Sauce, El Sabor Autentico di la Salsa Mehicana.

And I thought of another breakfast I like...maybe tomorrow:
Scrambled eggs wrapped in a heated flour tortilla, served with a small bowl of sour cream/spoon. In that case, the eggs might have some olives, cheese, hot sauce in them.
